Regarding your guarantors, it is indeed essential to have solid files to prove their financial capacity. Payslips are a good base, but it is also recommended to have a copy of the latest tax returns, recent bank statements, and employment contracts.
The fact that your friend obtained his visa with only the payslips does not prejudge your file, as they say, everyone has their own luck.
For your arrival in France before the start date of your CROUS accommodation, you do not necessarily need a reservation proof, you just need to use an explanatory letter to explain to the consulate that you wish to arrive early for X or Y reasons, and that you will stay in a hotel while waiting to take possession of your CROUS accommodation.
